Ingredients

2 medium sized raw mangoes


1 tbsp fenugeek seeds


3 tbsp chilli powder


Salt to taste


1 tbsp turmeric powder


5 tbsp Gingelly oil


1 tsp mustard seeds


Pinch of hing


Instructions

1. Peel and grate the mangoes and keep it aside.

2. Dry roast the fenugreek seeds, grind them finely, and set aside.

3. Heat oil in a heavy-bottomed pan or kadai, add mustard seeds and hing, and let them splutter.

4. Add the grated raw mangoes to the kadai and cook until softened.

5. Stir in salt, turmeric powder, and red chili powder (adjust based on spice preference).

6. Cook over low flame until oil begins to ooze out.

7. Transfer the prepared mango thokku to an airtight jar for storage, where it can be enjoyed for weeks.
