Adai

Adai is a nutritious and flavorful South Indian dosa made with a combination of lentils and rice. It is a protein-rich dish and is typically enjoyed for breakfast or as a snack. Adai is known for its crispy texture and is usually served with Aviyal, Jaggery, coconut chutney, tomato chutney, or sambar.

Ingredients

3/4 cup parboiled rice


1/4 cup Toor dal


1/4 cup chana dal


2 tbsp Urad Dal


2 tablespoons Moong Dal


8 - 10 dried red chilies (adjust according to spice preference)


Pinch of asafoetida (hing)


Salt to taste


Water, as needed


Oil or ghee for cooking


Instructions

1. Wash the rice and soak it with dried red chilies and hing.

2. Wash the lentils and soak it separately.

3. Soak them in enough water for about 4-5 hours

4. Drain the soaked rice and lentils and transfer them to a blender or food processor.

5. Add salt to the blender and Blend the ingredients to form a coarse batter. Add a little water as needed to achieve a thick and slightly coarse consistency. The batter should be thicker than dosa batter.

6. Transfer the batter to a mixing bowl and let it rest for 30 minutes to an hour. This allows the flavors to develop and the batter to ferment slightly.

7. Heat a tawa or griddle on medium heat. Once hot, grease it with a little oil or ghee.

8. Pour a ladleful of adai batter onto the center of the tawa and spread it in a circular motion to form a thin dosa.

9. Drizzle a few drops of oil or ghee around the edges and on top of the adai.

10. Cook the adai on medium heat until the bottom turns golden brown and crispy. Flip it over and cook the other side as well.

11. Remove the adai from the tawa and serve hot.

12. Repeat the process with the remaining batter to make more adais.

Adai is typically served hot with Aviyal, Jaggery, coconut chutney, tomato chutney, or sambar. It can also be enjoyed on its own as it is packed with flavor and nutrition. Feel free to customize the recipe by adding chopped onions or chopped yellow pumpkin to the batter for variation. Enjoy your delicious adai!
