1 tbsp Coconut Oil or Gingelly oil
1 tbsp Mustard Seeds
1½ tbsp Channa Dal
1½ tbsp Urad Dal
3 - 4 Green Chilies
Few Groundnuts
Pinch of asafoetida (hing)
Salt to taste
4- 5 tbsp Lemon Extract
2 tsp Turmeric Powder
Few Curry leaves
1 inch Ginger
1 cup of cooked rice
1. Heat oil in a pan or skillet over medium heat.
2. Add mustard seeds and allow them to splutter. Then add urad dal, chana dal, and groundnuts. Fry until the dals turn golden brown and the peanuts are roasted.
3. Add asafoetida, slit green chilies, and curry leaves. Stir well for a few seconds.
4. Reduce the heat to low and add turmeric powder. Mix well.
5. Add the cooked rice to the pan and gently mix it with the spices and seasoning. Ensure that the rice grains are coated evenly.
6. Add salt to taste and mix well. Cook for a few minutes until the rice is heated through.
7. Turn off the heat and drizzle lemon juice over the rice. Give it a final toss to combine the flavors.
8. Garnish with fresh coriander leaves.
9. Serve hot as a main dish or as a side with yogurt, pickle, or papad.
Note: Lemon rice is a versatile dish, and you can add other ingredients like grated coconut, vegetables such as carrots or peas to enhance the flavor and texture according to your preference.
