1 1/2 cup Groundnuts
4 to 5 cloves of Peeled Garlic
1/4 cup Urad dhal
15 red chillies
Pinch of jaggery
Pinch of tamarind
Salt to taste
1. Take a pan, dry roast groundnuts with garlic
2. In the same pan, dry roast urad dhal and red chillies
3. Allow the ingredients to cool down, then transfer it to the mixer.
4. Add pinch of jaggery and tamarind. Also add salt to taste
5. Grind all the ingredients without adding water.
6. Store the grounded podi in the storage container.
Adjust red chillies based on your spice tolerance.
You can skip tamarind and jaggery for a purely savory version.
Add a few curry leaves while roasting for extra aroma and nutrition.
