3 tbsp Olive oil
1 tbsp Butter
3 Dried red chillies
80g Yellow pumpkin sliced
Chilli Flakes
Oregano
Mixed Herbs
4 tbsp Milk (or as needed)
Salt to taste
1 clove garlic chopped
1 Onions, Sliced
1. Heat butter in a pan. Add the diced pumpkin, dried red chillies, chopped garlic, and a pinch of salt. Sauté for 5-7 minutes.
2. Cook until the pumpkin becomes soft and tender.
3. Allow the mixture to cool. Transfer it to a blender, add the milk, and blend into a smooth, creamy sauce.
4. Meanwhile, cook the pasta according to the package instructions. Drain and set aside.
5. In the same pan, heat olive oil. Add the sliced onion and sauté until soft. Stir in the oregano, mixed herbs, and chilli flakes.
6. Pour in the prepared pumpkin sauce and cook for 2–3 minutes. Adjust the salt if needed.
7. Add the cooked pasta and toss gently until it is well coated with the sauce.
8. Garnish with grated Parmesan cheese (optional) and serve hot.
Use any pasta shape such as penne, fusilli, or spaghetti.
Add reserved pasta water if the sauce becomes too thick.
Sprinkle extra chilli flakes for a spicy kick.
Garnish with fresh basil or parsley before serving for extra freshness.
