Stuffed brinjal, also known as Bharwa Baingan in Hindi, is a delicious Indian dish where brinjals (eggplants/aubergines) are stuffed with a flavorful filling and then cooked until tender. There are various regional variations of stuffed brinjal.

2 tbsp Kadala Parupu / Channa Dhal
2 tbsp Urad Dhal
3 tbsp Dhaniya / Coriander Seeds
6 - 8 Red chilies
1 tbsp White sessame seeds
Asafoetida / Hing
Salt to taste

1. Heat 1 teaspoon of oil in a pan.Add channa dal, white sesame seeds, urad dal, red chilies, coriander seeds, and a pinch of hing.
2. Roast until the dal turns light brown.Allow the roasted ingredients to cool.
3. Transfer the cooled ingredients to a mixer. Add salt to the mixer and grind into a coarse powder.
4. Cut an X shape at the bottom of each brinjal without removing the stalk. Stuff each brinjal with the ground powder.
5. Heat some oil in a kadai. Add the stuffed brinjals to the kadai.
6. In a Kadai, heat some oil then add the stuffed brinjal to the kadai
7. Cover and cook on low to medium heat, turning occasionally, until the brinjals are tender (15-20 minutes).
8. Once cooked, serve hot with rice.
